chocolate truffles

Chocolate Truffles
I know that in New York and some of the larger cities, that the chocolatiers are doing some fabulous things with unusual ingredients for chocolate trufffles.

I'm experimenting with a cayenne/chili/cinnaman mix I call "Menopause Moments" cause they cause hot flashes.

Anyone have recipes for wasabi truffles or cumin and such?

The "Everything Chocolate" Cookbook is where I've started for some great base recipes. I've even created my own version of a white chocolate and orange "Dreamsicle" truffles that's been a huge success.

    I love spicey chocolates! there so much more interestinf than the regular sweets (-:
    I use chilli and cinamon and nut mag with 99% dark chocolate.

    I haven't tried cumen or wasabi.
    it sounds interesting, if you succed in making something good, I'd loke the recipe, please

    I saw wasabi truffles for the first time, on a trip to paris last year, and have to say, it was not a pleasent experience for me. The chef said he gets plenty of people buying "for the first time" and "out of curiousity", so he keeps selling it, but few people actually come back for more.

    And personally, (i sorta suspect i'm alone in this) cinnamon and chocolate never did it for me. :-)

    but since i like chili and chocolates, i suspect your "menapause moments" are sinful.

    I need to find this cook book.


    My favorites that i'm trying to get down to an art, are teh Citrons. Lemons, Limes (esp limes), and anything in that sharp range. I've had plenty that are "gently" lemony, but i want your lips to pucker when you eat them, and be soothed by the rich black chocolate. Ummm... :-)

    One Truffel i saw in Belgum (same trip - it was my "chocoalte world tour... wahahahaah), was WOOD and chocolate. I didn't try it, cause they only sold it in boxes of 30 peices or so, of four flavors.
