I have little bottle moulds to make liqeur chocolates. I don't want to make liquer truffles. Does anyone know how i can fill the liqeur in the liquid form and then close the back of the bottle with chocolate. I think the melted chocolate will blend with the liqeur. please help.

Mon, March 26, 2007 - 7:53 AMI assume your bottle molds are 1/2 faced?
If so, generally you mold each half, let them fully harden.
then, lay a very flat peice of cut metal (I went to a hardware store, and bought a 5x5inch peice of metal - but anything that is flat, even a small pie tin, will do) layed over steaming water.
take one of the halves of the mold, and quickly run it on the now warm-hot metal, to melt the edge of the mold slightly.
Press it to a second mold, hold till the little guy seals up.
With a syringe (I got a perscription from my doctor, oddly enough, to have syringe and needle - but you can get cooking grade needles now), inject into teh hollow, hardened shell, the liqure or flavor you want in the bottles (on teh bottom, for the best and cleanest look).
with a hot/warmed knife, gently tap the bottom of the bottle to seal the hole, or use a bit of melted chocolate to do teh same.
then enjoy !

Sun, April 1, 2007 - 10:43 PMthe way I have made these is quite different, I use an invert glucose fondant, solid when it goes into the molded chocolate but turns liquid after its sealed in,
I gotta look up the recipe but its basically water, sugar, invert glucose and salt with the liquer added at the end, I'll even post a source for invert glucose, just be patient with me and give a couple of days, Its actually super easy this way and you do it right in the mold and then seal them as you would any other center, let them sit for 7-10 days and they are liquid inside, mmm nice and boozey too.
