Greetings to all, I'm new to this tribe and need some advice on making Rocky Road.
It's a pretty simple recipe, basically just Choc chips, butter, sweetened condensed milk, melted together on the stove until hot and well-blended. Then nuts and mini-marshmallows are added, stirred around and spread out in a shallow pan to cool.
The problem is that the chocolate mixture has to be warm enough to spread but try as I might, I always end up with melting marshmallows making swirls and creamy layers by the time I get it all spread out in the pan. I've tried spreading the marshmallows in the pan first then pouring the chocolate over. This works a bit better but does not always cover all the marshmallow like it should.
My feeling is that there must be some magic moment or technique with the chocolate that I'm missing - Does anyone have any experience with chocolate that will help with this?

I don't know of a "magic moment" to just know when is the right time, however, I will say that the chocolate will remain spreadable even when it is cool enough to touch with your hand. Think about holding a piece of chocolate in your hand, after a while, it will become all melty and gooey just from the heat of your hand.
Only heat the chocolate mixture until most of the chocolate is melted. Then, remove the pot from the heat. The residual heat in the warm chocolate will continue to melt the remaining chocolate as you stir. Heating the chocolate as little as possible will lessen the amount of time it will take to stir to cool the mixture enough to add the marshmallows. Allow the chocolate mixture to cool until you think it is almost too cool to spread. Then add the marshmallows, turn it out into the pan and spread it out.

Tue, December 12, 2006 - 8:54 AMWow, thanks Alisa! I think I've been in the habit of really getting the chocolate hot thinking that it would spread faster. You've given me the better thought of letting it not be so hot and letting is spread through the marshmallows slower. I'll definitely give this a try. Someone else mentioned freezing the marshmallows first. Do you think that would force the chocolate to firm up too quick?

Tue, December 12, 2006 - 9:27 AMI don't think that freezing the marshmallows would force the chocolate to firm up too quickly. But, if you avoid having the chocolate too hot when you add the marshmallows, freezing them would be unnecessary. Try it both ways. Do what you like best. -
