Anyone have a good tried and true maple cream recipe?
Also, any tips on making filled chocolates in general? They always make it look so easy on TV, just fill the molds, wait a while, flip over to leave a nice coating (which will be the top), fill, spread more chocolate over all, and put in the freezer. Well... when I tip my molds over, the whole damn thing ends up pouring out! LOL.

Or, when i try to "cap" them, inside my molds, teh chocolate get's thick and bumpy.

Fri, December 23, 2005 - 6:22 PMI usally do filled chocolates by using a paint brush, I paint a layer on the inside of mold then set the chocolate, making thickness, well I use the thickness of a quarter, as a guide, then I fill with the filling, weather it be creme or liquid, then I put a layer of chocolate over the top to coat the bottom and then set. Just don't fill it with the filling all the way, leave room for it to expand, this way it does not leak out all over when you "attach" the bottom. Hope this helps.
